Giant Wave Crashes Santa Barbara's Moby Dick Restaurant

Diners at Santa Barbara's Moby Dick Restaurant might think twice the next time they ask for a table with a view.... 

A recent winter storm along California's southern coast brought the sea to the table - literally.  Check out this video shot by a patron in the restaurant:

 

Luckily no one was hurt, and the restaurant didn't even suffer much damage - but the diners at this seaside spot certainly won't forget their dining experience any time soon!  We wonder how much longer the owners will hang on to the "million dollar view at every table" tagline?

Super Bowl Food Statistics: Are You Hungry for Some Football?


Like your football statistics? Here’s a little something to chew on! Super Bowl Sunday is fast approaching and many are hoping their Super Bowl Party scores a touchdown. You know the beer will be flowing and there is no better way to soak up that ale than adding chips and dip and some wings to the mix.
As the second most food-influenced day in the U.S. (Thanksgiving is #1), companies like Hass AvocadoFoster Farms and Budweiser make a killing on the mass indulgence of wings, beer and chips & dip. Here are the top Super Bowl Food Consumption Statistics for Super Bowl XLVIII:


Wings:
Approximately 1.25 billion wings will be devoured during Super Bowl XLVIII, as fans watch the Seattle Seahawks and Denver Broncos battle it out for the Lombardi Trophy.  That’s a 20 million-wing increase compared to last year and more than a 100% increase from 2010.

Avocados:
The Hass Avocado Board estimates that avocado consumption over Super Bowl weekend(Feb. 1-2) will best 104 million pounds (approx. 208 million avocados). That’s more than a 30% increase over the 2013 game.


Beer:
An estimate of 50 million cases of beer is sold every year on the day of Super Bowl Sunday. Roughly $1 billion was spent on beer in the two weeks surrounding last year’s Super Bowl at grocery and convenience stores, according to Nielson. That figure doesn’t even cover sales from restaurants, bars, hotels and the stadium itself.

Chips:
How many potatoes will it take to make up the 11.2 million pounds of potato chips that will be eaten in front of the teli during the big game? Think that’s a scary question? Then let’s not address the calorie count and grams of fat that accompany that statistic.

Pizza
Super Bowl Sunday is the highest sales day for pizzeria proprietors. Dominos expects to sell 11 million “pieces” of pizza, while Pizza Hut predicts a selling a mere 16 million slices of pizza during game time.

Paula Deen On Racist Slurs and Law Suit

As a fan of Paula Deen, it's disheartening to learn about her latest scandal. The "N" word should never be used by anyone, in any context. Even if you're in the privacy of your own home. That word symbolizes hate and ugliness and it has no place in the modern English language.

However, it still remains to be proven whether or not Deen is guilty of the charges that have been brought against her and her brother, Earl “Bubba” Hiers, in the law suit files by former Paula Deen Enterprises employee Lisa Jackson. Jackson alleges several instances of sexual and racial workplace discrimination. 



Apparently, the pressure and humiliation got the best of Paula Deen. According to Eater.com, Deen snubbed a scheduled appearance on The Today Show. But she did release a 48 second apology, addressing her mistakes and the scandal. Was this a heart-felt apology? I'll let you be the judge.

Gordon Ramsay's Suit Collection is Ever Growing

Let's face it, even with the over abundance of celebrity chefs, all pale in the entertainment factor when Chef Gordon Ramsay takes stage. And even though it's clear that's he's taken strides to tone down his image quite a bit over the past couple of years, this British bugger can't seem to avoid legal catastrophe.

This time, according to Radar Online,Chef Ramsay is facing a class action law suit filed by his current and former employees of his Fat Cow restaurant. Their claiming "failure to pay minimum wage for hours worked, failure to provide meal periods, failure to pay overtime wages and more..."

Most people like to collect shot glasses, shoes, etc. In Ramsay's case, suits seem to be his fortay. So, in honor of Ramsay's latest suit, I'd like to dedicate this song just to him.

Stanley Tucci's Cookbook is Worth Buying


Stanley Tucci's new cookbook titled “The Tucci Cookbook”, features nearly 200 recipes (with wine pairings) that have been passed down his family through generations.  But his fabulous recipes like “Concetta’s Stuffed Artichokes” and “Simple Ricotta Cake” aren’t the only reasons you should buy this titillating book.

Tucci will also be donating a portion of the proceeds from his cookbook to Food Bank for New York City. Try out one of his featured recipes now!

Stanley Tucci’s Steak Oreganato

Ingredients
  • 1 top round beef steak (2 ½ to 3 pounds)
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • Kosher salt and freshly ground black pepper
  • ½ cup dry red wine
  • ½ teaspoon dried oregano
  • Cooking Directions

The steak should be ½ inch thick. If necessary, pound it between two sheets of waxed paper to achieve this thickness. Warm the butter and olive oil in a large sauté pan set over medium-high heat. When the butter is foaming rapidly, add the steak and fry to brown on one side, about 3 minutes. (If the steak is larger than your sauté pan, cut it in half.) Turn, and season with salt and pepper. Brown the other side, about 3 minutes. Remove from the pan to a warm platter and set aside.

Add the wine and oregano to the pan, scraping up any meat that may have stuck to the bottom. Simmer to sweeten the wine, about 1 minute. Meanwhile, cut the meat into six equal portions. When the wine sauce is ready, pour it over the meat and serve immediately.

Fishing for a winner: Bravo’s Top Chef Season 10


The countdown for Bravo’s Top Chef Season 10 (TC10) has begun.
That’s right foodies, in seven days, twenty-one cheftestants will whip, sear, bake, broil and grill their way to win the coveted position of Top Chef.

Only one cheftestant will become Bravo’s TC10, and it looks like it’ll be hot in the kitchen.

First up.
 
 

Seattle.
Fun, funky, bohemian-like, Seattle, is known for its fresher-than-fresh seafood, among other things.

Seattle, in foodie terms, equals seafood.
Razor and geoduck clams, hama hama oysters, black mussels, wild Pacific salmon, dungeness crab, halibut, and black cod are just a few of the seafood species the chefs will work with this season.

As you might imagine, Seattleite's are excited about Bravo’s TC10 being in Seattle, even if one of its own, ouch, isn’t in the mix.

I chatted with Taylor Shellfish Farms, a shellfish grower in WA, about TC10. Its hope is the cheftestants take home a little bit of Seattle seafood knowledge.

Collectively, the cheftestants appear to be a recipe for success.
But how will they fare in the kitchen, alone, with say, a whole halibut, a flat of oysters, or a goeduck clam that resembles a cow tongue?

As we wait for the sizzling drama that complements each week of TC10, I created a mini profile of the cheftestants, to give you a little seafood amuse-bouche, so to speak, of what’s to come.

Does San Francisco Elizabeth Bender have an edge? She learned to fish with her father, an angler, and she’s been cheffing at top California restaurants for the last several years. Eater San Francisco dubbed Lizzie, “adorable.” Lately though, she’s been a stay-at-home mom. Will Lizzie find it easier to satisfy her hungry children, or the impressive panel of seasoned celebrity chefs?
Tina Bourbeau hails from NYC, where she’s worked at five, three star restaurants and currently uses her savvy business creds to manage an online gourmet grocer. Tina boasts her favorite dish is Celeriac ravioli, Roasted Peconic Bay scallops. Will she need to dig a little deeper to master the seafood challenges ahead?

Chrissy Camba from Chicago has staged at some of the finest restaurants in the nation. She can peel an orange with a clam knife, but can she cut a geoduck clam with a paring knife? Maybe those pre-med anatomy classes will finally pay off. We’ll sea.

Stephanie Cmar is the youngest cheftestant this season. She loves pumpkin spiced donuts so much, she’s got a donut shop in the works, according to Eater Boston. But what does this former wild child know about seafood? The jury is out on that one. Also, Kirsten Kris, her BFF, is a cheftestant this season. Is that a recipe for disaster?

Micah Fields, a hipster from LA can roll basil, “just like a doobie,” and didn’t eat shellfish until he was eighteen, just ten years ago. Now, he’s a serious seafood aficionado. He’s reeling in the sustainable seafood biz now as co-founder of Chefs Who Surf, an organization that promotes sustainability and ocean conservation. Brah, now we’re talking.

Eliza Gavin, cookbook author, restaurateur, Le Cordon Blue Paris graduate, world traveler and modern chef doesn’t mince saccharine-laced, love-dovey words with what it takes to manage a kitchen. She’s prepared to work. Okay Eliza, you can dice a pineapple, but can you shuck an oyster?

Anthony Gray knows how to shoot it, cook it and eat it. Anthony doesn’t need his shotgun in Seattle. However, his farm-to-table approach will be a bonus when he has to dig for clams. Anthony knows a few things about seafood, having worked in South Carolina’s famous High Cotton. We’ll keep our eyes on this “Atlanta Rising Star Chef.”

Jeffery Jew. This DC-based Army brat graduated first in his class at the CIA. A world-class traveler and chef, Jeffery’s Mediterranean culinary background might just prove to be his biggest asset in the seafood department. Worth keeping close tabs on.

Gina Keatley is an award-wining chef and nutritionist. Gina’s got her game on. She’s no stranger to television, culinary associations or humanitarian organizations. They love her, it seems. Gina has over ten thousand Twitter followers, a sizable leap over most of her competitors. Her favorite last meal includes blue crabs with her family. Aw, sweet. But will the judges love her cooking?

Kristen Kish is a young, savvy chef. She’ll be comfy in front of the other cheftestants-she’s a demonstration chef who works seven nights a week. With a mix of contemporary French and Italian influences, the benefits of youth at her back, and her BFF at her side, she’s got an edge going forward. She has the patience and skill needed to bake French macaroons, but are her hands and backbone tough enough for the shellfish and the fiercely competitive cheftestants she’ll encounter?

Danyele McPherson is fresh, ambitious and funny. She likes to work with seasonal, local fare and is a culinary techie. She knows old school tricks too, like peeling ginger thumbs with a spoon. Will she master the basics of oyster shucking, peeling and deveining prawns, and steaming mussels?   

Daniel O’Brien. This NY homeboy, now hails from DC where he's an ambitious chef/owner. Daniel’s speciality? Country rustic. A few of his “must-have” foods, pair well with seafood. Let’s see what he brings to the table with capers, olive oil and, hmm, duck fat? Let’s hope this talented, creative cheftestant brings his fillet knife to the party, too.

Carla Pellegrino is no stranger to the culinary world. This Brazilian, chef/owner, Las Vegas-based aspiring cookbook author, whew, that’s a mouthful, has cooked at The James Beard House, drum roll please, five times. With over fifty thousand Twitter followers, she has a lot to tweet about. She can roll a meatball, but can she remove the pin bones from a side of salmon? Let’s watch and see what she brings to TC10 kitchen.

Jorel Pierce has a knack for carving meat. This Colorado mountain man was taught butchering early in life, by his mama. Jorel persevered and worked to become a James Beard finalist. He can butcher an antelope in less than twenty minutes. He brings creativity, along with his blades, to TC10. How long will it take you to fillet a wild salmon, dude? I give you less than two minutes.

Sheldon Simeon may have the biggest seafood edge, he was born and raised on the Big Island in Hawaii. Sheldon, sounds like he should be from England, right? is no stranger to fresh seafood. This two-time James Beard finalist and Hawaiian native will bring his carefree, island vibe to the amped up TC10. He first sharpened his blades at Disneyland. He brings his fun, unique cuisine to the table. Mahalo dude.

John Tesar, this revered, feared chef brings twenty-plus years of food industry experience to the table. And I gotta admit, I’m hooked by his playful, ahem, mature attitude, not to mention, okay, I just did, the food porn on his web site. Uni and clams over black squid ink pasta, salmon Carpaccio and octopus. Somebody pick me up off the floor, I did a Carey Ann Inaba. John’s modernist cuisine paired with a traditional European influence, along with his experience working with two of my favorite celebrity chefs, Moonen and Bourdain, make him the most prized catch, IMHO.

Joshua Valentine is good with a blowtorch. As long as he keeps the flame away from his funky beard and his upturned Dali-like ‘stach. He loves cats. Not. Joshua’s Twitter handle, @chefporkbelly, might give us a clue to his passions.  Me thinks, this Oklahoma native might be a fish out of water. Lucky for him, his love of cookbooks and his diverse culinary experience garnish him, “Most likely to succeed.”

Bart Vandaele is chef and owner of DC’s inspiring Belgian eatery. Bart has a sexy Belgium accent and a fondness for eclectic socks. Bart has been sharpening his knives since he was twelve. With a regal name like Vandaele, a pedigree of awards, and a playful attitude, I’ll bet this Euro-chef knows a thing or two about seafood. Look out TC10 cheftestants.

Tyler Wiard is a self-made Corporate Executive Chef in Colorado. His experience counts for everything, from numerous James Beard events, to a multiple location dining director. His culinary direction is bold and simple. Bravo Chef, a perfect match for fresh seafood. Tyler is primed for working grueling hours and is full of energy. We should see big things from Tyler.

Brooke Williamson. This CA chef has worked her way up from a teacher’s assistant to become one of LA’s premier restaurateur’s. She cooks, she hikes, she runs, she loves to play with food, I’ll bet some of that is seafood. She’s the youngest cheftestant to have cooked at the James Beard house. We’ll see if she’s brings her playful attitude when she’s digging in the mud for clams.

Kuniko Yagi. This young, Japanese, former financier, found her way into the kitchen in the most unusual way, as a server in a noodle bar. It didn’t take her long to add her charm, talents and passion to become one of LA’s rising star chefs. It’s no surprise that her Japanese upbringing will have prepared her to use laser-like focus when seafood is on the chopping block. Look out cheftestants, Kuniko wields a mighty mallet.

Dubai Opens the 'World's Highest' Restaurant: AT.MOSPHERE

If you ever find yourself in Dubai, make sure to spend a meal in the sky at what's being titled the world's highest restaurant.

At.mosphere Bar & Grill is located 1,350 feet (that’s four football fields) high in the sky. An express elevator whisks patrons up to the 122nd story of the Burj Khalifa, the world's tallest tower, standing more than 2,700 feet above ground.

At.mosphere is "one of the finest luxury dining and lounge experiences in the world," said a rep from Emaar Hospitality Group, an arm of giant property developer Emaar.

At.mosphere sports a modern European “grilled cuisine” menu that showcases light-styled dishes, created by their executive chef, Dwayne Cheer. Chef Cheer has spent more than 13 years working in Michelin star restaurants.

But if you do find the opportunity to dine at At.mosphere, be prepared to put a small dent in your credit card. The dining experience will be at least $122 (U.S.) per person.

Restaurant officials at At.mosphere plan to apply to Guinness Book of World Records for the “world's highest restaurant” title.

Rachael Ray beats Bobby Flay for PCA’s Favorite TV Chef

The runners up? Gordon Ramsay, Jamie Oliver, Paula Deen and… the amazing Bobby Flay! It’s pretty impressive work to take the prize from VERY stiff competition.

The Savoy Grill May Be Gordon Ramsay’s Saving Grace

Gordon Ramsay may have taken a few beatings over the past couple of months, but his nasty rep and legal debacles haven’t been passed to the recently renovated Savoy Grill in London. I’m sure we all expected the Savoy Grill to follow in the footsteps of his most recent restaurant, Petrus, which fell to some very harsh reviews. Fortunately for the unlucky Ramsay, this wasn’t the case.

The result of a £220 million renovation has put the Savoy back on the map, being referred to by critics as “grand”, “elegant” and “glamorous”. One even compared the Savoy Grill to the “well-tuned purr of a vintage Rolls-Royce”. The Savoy menu, made up of modern dishes with classic British & French influences, like Baked Hereford Snails, Glazed Native Lobster Thermidor, Roe Deer Venison Chop, and Braised English Hare, has been positively received by critics. I’m sure Ramsay is taking a few deeps breaths of relief.

And while the majority believes Ramsay has redefined the word “schmuck”, even schmucks deserve a break. Let’s just hope this win doesn’t go to his nasty little head and further inflate his big, fat ego.

Taken off Cruz Control

According to sources, Chef Juan-Carlos Cruz is all about creating "job opportunities" for the homeless!

On May 13th, Cruz was arrested for paying three homeless men to take the life of his wife, Jennifer Campbell. Fortunately, she wasn't harmed, but Cruz is now pleading “no contest” to the charges against him and facing up to 9 years in the state pen. Since he submitted his guilty plea before the trial began, Cruz’s motives and details of this grisly murder plot have yet to be made public. I'm sure we're all wondering what this jackass trying to hide...

Rumor is that Cruz paid the men $1000 in cut hundreds to take out his wife. After a “throat slitting” plot was interrupted (by loitering charges) the homeless men informed authorities of the murder conspiracy before the grisly plan was executed. Cruz and the three men were then secretly observed by the police as he walked them through the ins and outs of breaking into his house.

The chef once starred in two shows on the Food Network and was known for helping people "lose weight without losing the taste". His new "show" about trying to "lose a wife without losing freedom" doesn’t seem to be working out for him.

One of the homeless men, known as “Little Dave”, told media that Cruz needed "dirty deeds done dirt cheap." This shady situation is even more surprising because only four years ago he was giving his wife public praise in his “Calorie Countdown cookbook” acknowledging her by writing, “First and foremost, I thank my beautiful wife for her belief in me and her encouragement.”

Juan-Carlos Cruz and Jennifer Campbell were high school sweethearts, but it’s rumored she was having trouble getting pregnant. 20 years of trying to conceive had left them both tired and depressed. Could fertility problems have been his rational for a murder plot? What other secrets could have driven this clean cut Catholic to such psychotic extremes?

Starbucks and the Booze Crusade

The Olive Way Starbucks in Seattle just made my “top 10 places to visit” list. This store is testing out an “after 4pm mood menu” that’s sporting craft beers, wines, and local cheeses. They keep locals amped up with espresso by morn and then transform into a suave, relaxing café by night. Starbucks thrives because of the “home away from home” atmosphere they provide. I expect that by extending this new menu their customer traffic will multiply by 10 (at least).

The United States has put such a negative stigma on alcohol consumption that just doesn’t exist in other countries. If Starbucks adds wine and beer to their roster of fabulous drinks across their nation-wide establishments and portrays the new additions as a classy social affair, maybe it’ll start a new trend that allows café-goers to unwind a bit, without creating a booze-slogging atmosphere. After all, how many partyers feel the magnetic pull of a café?

And think of the impact it’ll have on the singles scene! We all know it’s a bit passé to meet a first date at a bar, but mingling at coffee shops is practically second nature. The new ambiance that Starbucks is aiming to create is said to be more reflective of community spirit that will gain back that local feel that has been long lost from this coffee giant.The question is: how steep will the price of a Grandé amber ale run? Starbucks is well known for dipping deep into customer pockets. The novelty may be fun for a while, but the cost of double tall lattes, fine cheese and Merlot will jack up the tab pretty fast. That said, I would be quite content to live in a world where great coffee and great beers can co-exist in the same location.

Toss the Burger NOW!

Why are McDonald’s Happy Meals causing a major ruckus??

Alright, so we’re all well aware that decomposition of McDonald’s burgers has been put to the test and the mold-show is a no-go. But to put this nastiness on display?? WTF!?!

An artist from the Big Apple decided to take her talent and put it on display by putting a bun, meat patty, and fries on her shelf and photographing their (lack of) mold over a 6-month period. The set up and concept actually disgusts me more than the concept of consuming a McDonald’s burger. My Guess? She must live alone... I wouldn’t tolerate any burger experiment in my apartment, let alone one that involved the use of my cupboard over a 6-month period.

That said (and to add to this nasty tale), curiosity has been sparked: More and more peeps are starting their own fast food collections… And in my opinion, all of this is WAY more disturbing than chemicals used to keep these buggers… errr… I mean “burgers” alive.

Jamie Oliver, Stop Whining!

In a recent interview with the Guardian, our sympathy falls to the interviewer, Decca Aitkenhead, whose approach to Jamie Oliver’s incessant whining seems almost saintly. He insists that no one understands him and seems to have diarrhea of the mouth, when he states “God, why do I give interviews to the Guardian? They always try to dissect you..." I’m surprised that Decca remained sympathetic to him and his cause.

And when it comes to his Food Revolution, I actually do think we’re getting it. Yes, there are Americans that love their fast food and are going to fight for their right to raise fat children. We label these people as “Stupid Americans”. You have to be a complete idiot to not realize that meals made up of chips & candy is the primary cause of America’s health problems.

Jamie, this isn’t news to most of us – major campaigns opposing the junk food epidemic have been ringing out loud and clear for decades. We do understand your mission and would love to see a change in the average child’s lunch box. No one wants government control over what schools feed their students, but the people who feed our children need to have brain cells when selecting meals. Instead of campaigning for healthier food, why not campaign for smarter school employees and school lunch vendors?

Then there’s the cost factor. It’s a known fact that there’s a higher price tag associated with fresh and healthy food. And with the unemployment rate being what it is, it’s no surprise that Middle America is taking a more economical approach to feeding their children. I’d get into the taste-factor, but why point out the obvious (kids will always appreciate a Happy Meal to over-cooked/under-seasoned food).

That said, based on the rising popularity of farmers markets, we are actually seeing some traction in the daily diets of the average American. And look at the celebrities that are endorsing your Food Revolution: Heidi Klum, Paul McCartney, Kim Kardashian, Ellen Degeneres, & even Justin Bieber, who is still just a kid himself. Yes, there are some people who will resist change, but that isn’t reason enough to think that everyone is against you. People are trying to change and all your effort is appreciated by those with brain cells. Maybe you’re just spread too thin to take notice. Take a breath, play with your kids, and while you’re doing that, we’ll eat some vegetables in your honor.

Spaghetti Tacos Galore


Spaghetti Tacos are blowing up the internet, everyone is talking about how their kids are obsessed. The New York Times did an in-depth look at the little lovers of these pop-culture creations. Modifications and new recipes are all over the place. It’s a dinner from the Nickelodeon show ICarly that the older brother Spencer came up with. Simply put some spaghetti in a crunchy taco.

What? I love how it’s taken up such popularity. I’ve never eaten one, but if I was 10 again I wouldn’t say no. Maybe we adults can start a trend cooking up lasagna in a tortilla shell… maybe. When it comes to kids you have to be able to have fun with your food. You may love gourmet food, but your kids will not have anything to do with it. If you can allow them to be creative with their food, they'll be open to trying new things. Picky children need be a thing of the past. This craze really shows how big of an impact television can have on kids and maybe even American dining as we know it. [Fade to Black]

Frankenfish

Just in time for Halloween: Genetically modified salmon are becoming the topic of conversation. We’re now questioning safety, morality, and taste. Salmon is my favorite fish. It brings back childhood memories of sitting on the river and fishing with my dad. And when I found out it was healthy I couldn’t have been happier. Lately, the world’s supply of salmon has been dwindling, threatening fish houses and sushi restaurants alike.

Aqua Bounty is the company that has been developing genetically modified Salmon that grow twice as fast. And it’s said that this mix-and-match of genetics wouldn’t be labeled differently in stores. The only way I could go for that is if they tasted the same – exactly the same. Which, let’s be real, isn’t be possible. A wild salmon that was born and raised in the rugged Alaskan terrain is going to have more of a kick than any test-tube salmon baby. People are also concerned about potential allergens and the possibility of these “Frankenfish” getting out into the wild and wreaking terror on the wild salmon population.

It’s one thing to mess with our crops, but putting the meat we eat in the hands of scientists is a little scary. I think as long as this “new salmon” is separated from the real salmon I’ll accept it (but I still won’t eat it). How much worse can it be from the hormone filled and potentially diseased meat that already tries to creep onto our plates?

What’s next? An engineered pig that will produce less harmful phosphorus waste? NooOo - not my bacon!
