Top Chef All Stars Episode 13 Recap: Top Chef Finale Part 1

The 5 remaining chefs return for the Top Chef Finale, Part 1
How juiced were you about this week’s Top Chef All Stars, episode 13?? It made me laugh, it made me cry (that might have been the onions in my salad), but best of all: It had a serious Quickfire! So happy that Bravo TV made retribution for last week’s Top Chef slowdown. It's the first part of the Top Chef All Stars finale, so we all know this episode ain’t gonna end pretty.

And now, here’s the recap for Top Chef All Stars Episode 13: Fit for a King

A few months have passed since the previous episode and we see the five chefs arrive, looking tanned and relaxed (and Richard Blais sporting some new facial hair). While the chefs wait for their Quickfire, they take a moment to reflect on their previous seasons/finales:
  • Antonia Lafaso says she wants the title more than the money.
  • Richard Blais remembers choking in his Puerto Rico-based Top Chef finale and doesn’t want a repeat.
  • Carla Hall remembers losing her finale because she didn’t follow her own instincts – clearly, she didn’t make that mistake this season (hootie!).
  • Mike Isabella spent his break in Washington D.C., training for the finale.
  • Tiffany Derry acknowledges her “underdog” position and is grateful that she wasn’t cut at #5 again.
Then Padma Lakshmi and guest judge Eric Ripert pop in to take the chefs to their Quickfire challenge. The chefs walk into the ruins of an old fort and set eyes upon (pause – wait for it…) the Top Chef Winners from their original seasons: Hosea Rosenberg, Michael Voltaggio, Kevin Sbraga and Stephanie Izard.

Quickfire Challenge:  The remaining chefs are matched against the Top Chef of their respective season for an opportunity to beat their season’s winner. The winner for each table gets $10,000. Each table is also sporting  a mystery meat that will be used as their main ingredient. The teams and meat are as follows:
Carla Hall and Hosea Rosenberg get lamb.
Richard Blais, Antonia Lafaso and Stephanie Izard get rack of veal.
Mike Isabella and Michael Voltaggio get a whole duck.
Tiffany Derry and Kevin Sbraga get pork.

Kevin Sbraga makes Barbeque Pork with Cilantro, Celery, Shaved Onions and Citrus.
Tiffany Derry makes a Pork Stew with Potatoes, Peppers, Citrus and Allspice.
Winner: Tiffany wins! You go girl!

Hosea Rosenberg makes Braised Leg of Lamb in Red Chili Broth with Olives and Mint, Goat Cheese and Rosemary Polenta.
Carla Hall makes Rice and Harissa Lamb with Peppers, Onions and Lime.
Winner: Hosea wins… Carla’s lamb was undercooked…

Stephanie Izard makes Veal Scallopini with Tapenade and Poached Egg.
Antonia Lafaso makes a Roasted Veal, Leek and Almonds Puree with Sautéed Mushrooms, Arugula and Raisins.
Winner:  Stephanie wins over Antonia in a split judges' vote! But neither dish was anything to write home about.

Richard Blais makes a Seared Veal Loin and Braised Veal Cap with Raisins, Carrots, Potatoes and Mushrooms.
Stephanie is competing with the same dish that beat Antonia.
Winner:  Richard wins! Kinda saw that one coming…

Michael Voltaggio butchers a duck in the Quickfire
Michael Voltaggio makes a Duck Breast and Duck Leg in Bacon Vinaigrette, Burnt Leek and Coffee Pesto.
Mike Isabella makes a Cashew Dusted Spiced Duck Breast with Duck Leg and Mushroom Jus.
Winner: Mike Izzy wins over Michael V?? It was another split judges' decision, but I never saw that coming. Probably didn’t help that Michael V. did all the butchering…

With Richard, Tiffany and Mike Isabella all $10k richer, the chefs move on to the Elimination Challenge.

The Elimination Challenge: The chefs have to be on top of their game as they cook for Bahamian royalty. They have 2 ½ hours to prep in the kitchen of the hotel they’re staying at and then they’ll have 1 hour to cook at the serving location. The kitchen is fully stocked so they won’t need to do any shopping this time around.

The chef prep in the hotel kitchen with the usual chaos we see every week. It’s sad to see Carla lose her confidence, but we’ve seen this before and she always makes it through with flying colors. Mike Isabella goes off on a girl-hating rant, claiming that they’re playing it safe. I was a Mike Izzy fan until he stole Richard Blais’s chicken oysters. Since then, he’s embraced the exact obnoxiousness that made him so unlikable in his original Top Chef season.

The chefs finish prep and head to their elimination challenge local – making a pit stop at a Marde Gras-like parade, where the chefs take a moment to party with the locals. When they arrive at their cooking destination, they find out that the kitchen they have to work with is micro-sized in comparison to the one they just came from. But the chefs suck it up and get to work cooking for fifty people.

Antonia begins using one of the deep fryers and notices that the one next to it is beginning to smoke. Then the burner bursts into flames and the chefs are evacuated from the kitchen – all of them more concerned about the safety of their food over the idea of being burned alive. As the chefs wait to return to the kitchen, we see an uglier side of Richard as he tries to psych out Antonia, who is already freaking from the fiery setback.

Tom inspects the kitchen and reports back to the chefs – and it’s not good. The chemicals from the fire extinguisher contaminated their food. The chefs will have to start their meals from scratch (again). This is where I shed a tear, though it was probably from the red onion in my salad. The chefs remake their dishes, but Carla’s pork medallions are undercooked and Antonia doesn’t feel right about her dish. It’s clear that the pressure has gotten to both of them.

The chefs serve up their dishes to the judges, the King of Junkanoo and the other guests.
  • Carla serves up Fried Pork Medallion with Sweet Potato Puree, Apple Sauce and Apple Chip.
  • Antonia serves up Crispy Shrimp and Grits with Cilantro and Pickled Vegetables.
  • Mike Isabella serves up a Sous Vide Chicken, Mushrooms, Yams, Lobster Sauce and Lobster Hash.
  • Richard serves up Roasted Lamb Loin and Malted Braised Leg with Pickled Turnip and Mustard.
  • Tiffany serves up Roasted Spiced Pork Tenderloin, Dirty Rice, Curried Slaw and Tomato Jam.

Nobody seems blown away by the dishes they’re served. But what do they expect?? If there were a fire at a “real” restaurant, the entire place would have been shut down for at least a day. To get smacked with a fiery catastrophe, just to be tossed back in, an hour or so later just isn’t fair. The chef that wouldn’t be impacted by that is someone I would love to meet.

The Elimination:
All five chefs are sent to the Judges table, where they’re told that the entire meal was a miss (owch). Carla’s pork was undercooked and her apples were too sweet, Tiffany’s dish lacked complexity, Richard’s lamb was cooked well, but it was still missing something and his cannelloni didn’t impress everyone. The only chef who didn’t get the smackdown is Mike Isabella. His dish wasn’t amazing, but it didn’t suck.

Which is why we’re not surprised when Mikey wins. Are you wondering if he was the one who started the fire? I didn’t mean that. Just the lingering bitterness of chicken oysters…

And then they select the chef to send home. Padma says…

“Carla, please pack your knives a go.”

Wow… Really?? Carla takes the blow, like a champ. And she should – for most of the season, she was the champ. This was only a single episode with a single loss after many, many wins. We love you Hootie Girl!

Next week, on Top Chef All Stars Episode 14: It’s a very hot Top Chef finale! Padma sports a bikini, the chefs have to fish for their ingredients (not on a boat this time), and they’ll be cooking up one of their meals on the beach…

Top Chef All Stars Episode 13 Preview: Fit for a King

On this week’s Top Chef All Stars, Episode 13 (“Fit for a King”), the chefs arrive in the Bahamas for a Caribbean cook-off, and each participates in a culinary duel against the “Top Chef” who won their original season. This includes the previous Top Chef Winners Hosea Rosenberg, Michael Voltaggio, Kevin Sbraga and Stephanie Izard.

Quickfire Challenge:  The remaining chefs pair up with the Top Chef of their own respective season for an opportunity to beat their season’s winner. Each winner gets $10,000? (Don’t quote me on that)
  • Carla Hall and Hosea Rosenberg have to split meat and Carla thinks she can beat him this time around, while Hosea just wants to prove to the haters that he did in fact deserve to win his season of Top Chef.
  • Richard Blais, Antonia Lafaso and Stephanie Izard get rack of veal, which throws Richard for a curve ball. Stephanie doesn’t seem to thrilled to have to compete against both Richard and Antonia, but likes the idea of winning $20k if she beats them.
  • Mike Isabella and Michael Voltaggio get a whole duck and only have 40 minutes to cook it. Mike tries to buy himself some time by making Michael Voltaggio butcher the duck. Shady as always, Mikey, but you still don’t stand a chance. Mike V came by to clean the kitchen with your deceitful arse.
  • Tiffany Derry and Kevin Sbraga get pig (I think). Tiffany just wants to perform well and blow the judges away with the flavors of her dish. Kevin’s back is killing him.

The Elimination Challenge: The chefs have to be on top of their game as they cook for Bahamian royalty. The chefs have 2 ½ hours to prep and, as usual, the pressure is on.
  • Mike Isabella is making a hash dish, with lobster, quail or Cornish game hen (small game bird) and allspice. You can see sweat dripping from his nose into his food. He should be DQ’d for that nastiness.
  • Richard Blais is making a spiny lobster with pulled pork and pickled turnips… Yummm…
  • Antonia’s dish is made up of lamb, bacon, Brussels sprouts, blue cheese and hazelnuts.
  • Padma Lakshmi looks like a Top Chef in a bikini.
    Tiffany makes a surprise, but I bet it’s fabulous!
  • Carla cooks up pork medallions and apple chips. This may sound simple, but we know it's dishes like this that always seems to put Carla Hall on top.
Other rumors and Top Chef tidbits:
  • Mike Isabella drools over Padma Lakshmi in a bikini.
  • And (for next week) The chefs have to fish for their ingredients and I’m hearing rumors of fire trucks, a kitchen evacuation and lots of crying. Let’s hope they cut the crying short this time and the winner actually deserves the title “Top Chef”.

NBC's America's Next Great Restaurant Premier is Soo Worth the Watch!

America’s Next Great Restaurant premiered on NBC last night giving us a new food show to gush about. The first impressions of the contestants are quirky and not entirely professional. Each contestant must present a great idea in 2 minutes to the investors Bobby Flay, Steve Ells, Lorena Garcia, and Curtis Stone or see their dreams rejected. The investors are stone cold and are not letting the contestants get away with anything.

When a good idea comes around the America’s Next Great Restaurant investors don’t hesitate to say yes. That’s when you get hooked on their stories. Menu concepts ranged from healthier styled dishes to indulgent comfort food, which included an appearance of chicken and waffles. My favorite dish was the BBQ Chicken grilled cheese! But who doesn’t just love a good grilled cheese sandwich.

America’s Next Great Restaurant to Premier on NBC!

America’s Next Great Restaurant Contestants
America’s Next Great Restaurant is premiering tonight on NBC for our celebrity chef viewing pleasure. Everyday people with fresh ideas for a fast, casual restaurant chains are going to be competing for the opportunity to launch their own new restaurant chain in Hollywood, Minneapolis, and New York City.

The next Chipotle, Panera, or Five Guys type of restaurant is going to be created before your own very eyes. Celebrity Chefs Bobby Flay, Steve Ells, Lorena Garcia, and Curtis Stone are the judges for the show (and will invest in the winner), making it an all-star celebrity chef lineup!

America’s Next Great Restaurant might seem familiar because it’s produced by the same creators of Bravo TV’s Top Chef (Dan Cutforth, Jane Lipsitz).  Will it be as deliciously addictive as Top Chef? I guess we’ll just have to find out tonight at 8/7c on NBC!

Top Chef All Stars Episode 12 Recap: Give Me Your Huddled Masses!

Tonight’s Top Chef All Stars Episode 12 left me rather perplexed – were you? I hate endings that leave you hanging – especially ones that aren’t rewarding, but really just obvious tactics used to drag out a story line that could have been far more interesting had the story just gone direct. But I digress… Here’s the recap for Top Chef All Stars Episode 12: Give Me Your Huddled Masses!

Opening Scene: Richard Blais wasn’t prepared to see Dale Talde go home and he can’t celebrate his elimination win. And once again, Tiffany Derry is surprised she didn’t have to pack her knives (I’m rooting for you Tif!).

The chefs head to their “home bar” and everyone drowns their Dale-loss sorrows in drinks – except for Antonia Lafaso, who calls her daughter for a pick-me-up – then the top chefs drink to their next challenge (reluctantly). Mike Isabella: is that remorse I see on your cheating face?

The chefs are making breakfast and wondering what’s in store. Then…  Antonia says: “Is Padma coming in here?”

Suddenly Padma Lakshmi walks into the Top Chef’s apartment (welcome and get out) and  tells the remaining chefs that they should be proud to have beaten the 13 eliminated chefs (we know this is because of luck and "producer say" – less because of talent).

The chefs will be heading to Ellis Island for their Quickfire and Elimination challenges.

The Quickfire Challenge:
The chefs have to cook something with the ingredients in the boat snack bar before the boat docks on Ellis Island! There's no clock so they have no idea how much time they have and all they have to work with is “snack food”. 

This challenge is terrible. It has nothing to do with "real" cooking. But here are the top chef dishes:
  • Richard Blais whips up a Hot Dog & Beef Jerky Sandwich with Jalapeno, Pork Rind, Lettuce and Apple.
  • Tiffany Derry whips up a Nachos dish with Lettuce, Cheese, Tomato, Jalapeno, Banana Pepper and Sour Cream. Then she tops it off with a Candied Mangos and Pineapples Popcorn. Love you, girl!
  • Mike Isabella whips up Bread Soup with Cheddar Cheese, Sour Cream, Green Chili and Pork Rinds.
  • Carla Hall whips up Orange and Papaya Salad with Carrot and Rosemary Juice.
  • Antonia Lafaso whips up Grilled Cheese with Apples and Raisin Bread.

Mike Isabella says he wouldn’t serve his dish to his cat. Of course, Mikey. It was a crap-food competition. Whatever you made isn’t worth serving. You’re being judged on what sucks less.

Richard complains. Richard, you can’t be bitter towards the winner of a snack challenge. In the end, all of the food tastes like crap (their crap tasted better than your crap). 

The Elimination Challenge:
The chefs are reunited with their families (this is sweet). But they have to cook up dishes that relate to their heritages. Really not crazy about this episode. It almost seems as if they picked the “TOP CHEF” winners based on nationalities, instead of their skills. What would have happened if the top 5 were Richard, Marcel, Fabio, Spike and Casey?

How many of our forefathers skipped the Ellis Island bandwagon? I’m kinda thinking this challenge is full of dog poop - but at least the chefs are cooking "real" food.
  • Mike makes Potato Gnocchi with Braised Pork Shank Ragu and Burrata Cheese.
  • Antonia makes Braised Veal, Rapini Leaf and Fava Bean Risotto.
  • Tiffany makes Braised Short Rib with Mustard Greens, Grilled Okra and Oxtail Marmalade.
  • Richard makes Short Ribs, Potatoes, Fried Bone Marrow, Corn Puree and Pickled Glasswort.
  • Carla makes Braised Pork Shoulder, Fried Grits, Corn and Sweet Potato Hash and Cheddar Biscuits. 
The Judges Table:
Kinda want to skip all of this. The judges say everyone wins - nobody is sent home.

So happy Tiffany survived and of course “top chefs” Carla Hall, Richard Blais and Antonia Lafaso. Given Mike cooked up a storm and (for this round) didn’t deserve to be sent home, but to not send anyone home was LAME (with capitalizations).

Hate me if you want to – I believe in quality over quanity (I'll make up for it in spades next week).

Top Chef Masters Season 3 gets a Makeover

Season 3 of Top Chef Masters Premiers on April 6th, 2011 
How bummed are you that Top Chef Season 8 is so close to wrapping up? With only 3 episodes left (two after tonight), I’m sure you’re wondering if anything can fill the Top Chef void after such a fantastic season. Well rest assured that your Top Chef void won’t be empty for long. On April 6th, Top Chef Masters returns to Bravo TV with a new and improved season. And here are just some of the perks:

Renowned food critic Ruth Reichl joins Aussie Chef Curtis Stone and returning judge, James Oseland, on the Top Chef Masters judge’s panel.
And Bravo TV has decided to take the show in a new direction. The past Top Chef Masters competition events were judged based on a starred-scale, but season 3 of Top Chef Masters is switching to the same type of elimination-style challenges that we see on the original Top Chef series.

The cheftestants earn $5,000 for their designated charities for each Quickfire they win and $10,000 for each Elimination Challenge that’s won. The final winner of the season collects another $100,000 for his or her charity.

And the bonus, these chefs will be serving up food for some master entertainers and celebrity guest judges that include Mad Men’s Christina Hendricks, Maroon 5 and pop sensation Kelis, among others.

I was pretty wary of the upcoming season of Top Chef Masters, but with the additions of Ruth Reichl and Curtis Stone and the change of competition style I think this may be the best season of Top Chef Masters yet!
