Top Chef All Stars Says Farewell to Tiffany Derry

On this week’s Top Chef All Stars Episode 14 (Island Fever), we saw the girls beat the boys, we saw too much skin (go Padma! Mikey put your shirt back on!), and we saw a big surprise win and an almost expected loss.

While I would love to say “I told you so”, I can’t – because I didn’t. Not even close. But I’m not disappointed either. Mike Isabella takes home the Top Chef cake this week and squashes the Top Chef competition with his magical pineapple. When he described it, I almost took a step back, until I pictured what he was trying to accomplish…

While I know Mike Isabella isn’t a fan favorite, he really has brought a strong game to the table. And if he continues to pull out all the stops, I’ll root for him to the end. Yes, He’s incredibly obnoxious. Yes, he’s extremely arrogant. Yes, I’m afraid his least-likable traits will surge to an unbearable extent if he wins – but so will Richard Blais – and Richie ain’t half as entertaining.

My ideal Top Chef showdown would have been between Carla Hall and Richard Blais, but since Carla has been 86’d and Richard has openly admitted to his manipulative tactics against his competitors, I’ll take the lesser of two evils. Mike Isabella is dense, but he’s sported some unexpected magic that has proved effective. Aren’t you curious to see what else he comes up with?

All that said, I was soo sad to see Tiffany Derry pack her knives tonight – and shockingly, I didn’t quite see it coming. You could see Tiffany push herself to the limit and throughout this episode; she seemed to be on top of her game. In the end though, she really didn’t seem to have the killer instinct.

Even though Tiffany didn’t survive this episode of Top Chef All Stars, she managed to survive most of this season and she’s proven that, not only is she a lovely person, but she’s a very talented cook.

Top Chef All Stars Episode 14 Recap: Island Fever (Finale part 2)

On this week’s Top Chef All Stars, episode 14 (Island Fever): Only four chefs are left as we said a bitter farewell to fan-favorite Carla Hall last week. Now the final four chefs, Richard Blais, Antonia Lafaso, Tiffany Derry and Mike Isabella will battle it out in part two of the Top Chef All Stars Season 8 Finale. Let’s just hope it’s a fair fight this time…

And now here is the Top Chef All Stars Episode 14 recap:
In the Bahamas the chefs mourn Carla Hall’s departure. Antonia Lafaso is still trying to grasp her near miss. Mike Isabella, on the other hand, is convinced he's ‘King of the Kitchen’. Richard Blais is apathetic. And the only one who seems to truly miss Carla Hall is Tiffany Derry.

The chefs arrive at the Atlantis Kitchen to find Padma Lakshmi and Chef Lorena Garcia, one of the country’s leading Latina chefs, a judge on America’s Next Great Restaurant and creator of Big Chef Little Chef, standing by a stack of plates and aprons.

The Quickfire
Mike Isabella & Richard Pair Up for the Quickfire
The chefs divide into pairs, in a challenge focused on "consistency and precision," to cook 100 identical dishes in one hour. Padma Lakshmi and Lorena Garcia will pick random plates to taste, just to be sure the chefs don’t spruce up specific servings to impress the judges.  The prize: $5000 furnished by Trilato Wines.

Mike Isabella and Richard Blais immediately decide to pair up – Mike says Antonia Lafaso is a “black hammer” and will take down anyone she pairs up with. Antonia would have chosen Tiffany Derry as her partner anyway, since Tiffany is always calm, cool and collected.

  • Richard and Mike make a Pork Bolognese with Fresh Macaroni and Pecorino Cheese. Richard goes on about how he’s never on the bottom and wants to spread intimidation among the other chef. I want to backhand him after he says this, but hitting a TV would hurt.
  • Antonia and Tiffany make a Beef Tenderloin Salad with Cilantro, Mint Basil and Chimichurri Sauce. The girls are making everything in one batch to ensure consistency.
Once again, Richard makes snotty comment about his competitors, calling their plates a “slice and serve” dish.

The boys can make all the snotty comments they want, but plating four perfectly created components on 100 dishes that match seamlessly tops scooping the same amount of pasta onto 100 plates. They clearly missed the point of this challenge and per Mikey’s sentiment: Run to the store, buy a case of beer and drink your snotty loser selves into a stupor and remember your place for the upcoming challenge – oh, and talk less shit about your competitors.

The girls embrace with excitement and Antonia proves that she’s not a ‘black hammer’ in this challenge. They enjoy watching the boys simmer in their bitter loserishness. (Yes, “loserishness” is a word… A word that I invented!)

The Elimination Round
The chefs must create a high-class lunch for the Nassau Yacht Club’s 80th anniversary. The chefs must incorporate the most signature ingredient of the Bahamas: Conch

Richard thinks that he should win because he grew a beard. Mike Isabella thinks he’s dominating the competition – has anyone informed him that he LOST the Quickfire challenge? Tiffany seems unusually confident, without being arrogant (of course).

Padma Lakshmi greets the chefs in a bikini, with a crocheted wrap. She’s clearly dressed like this for publicity reasons and it worked. Mike Isabella drools over her shamelessly (shocker). A half-naked Padma tells the chefs that their challenge starts the moment their feet hit the sands of the private island they’re being taken to.

The chefs arrive at the beach and find the boxes of food – but there’s a catch: in the box labeled  conch, the chefs find snorkeling gear. Tiffany is freaking about sharks and the rest of us are freaking about having to see Mike Isabella topless – swim with your shirt on Mikey!! Richard needs to fish in a waiting pool.

Tiffany (a 1st-time snorkeler) kicks butt. Antonia does as well. The chefs begin cooking on the beach, with MAJOR limitations: they have no electricity, gadgets or equipment.  They have to break the conch out of the shell – which none have experience… All the chefs are struggling…

All four chefs seem confident of their dishes. Is it terrible that Mike Isabella is (kind of) winning me over again? If only he’d stop slammin’ the competition… Richard’s incessant rambling always sounds the same. Win or lose, I don’t care.  The judges and diners arrive wearing all-white outfits. Pretentious, but hopefully their bravado won’t be…
  • Richard Blais serves a Sweet Potato Linguine with Conch & Spiny Lobster.
  • Antonia Lafaso serves a Seared Red Snapper with Conch Tartare and Lobster Nage.
  • Tiffany Derry serves a Conch and Coconut Chowder with Sweet Potatoes and Conch Ceviche.
  • Mike Isabella serves a Banana Leaf Wrapped Grouper, Braised Pineapple and Conch Vinaigrette. Are you surprised that he stole his dish concept from Elia Aboumrad (season 2)

Mike scores points (with me) by mentioning my favorite cocktail of all time: a Dark & Stormy! It would have been nice if the chefs didn’t crowd Tiffany while she finished her dish.  The only chef that doesn’t mouth off about their “winning dish” if Tiffany.

We see the chefs waiting to be called up by the judges and the only chef that feels good about their dish is Tiffany.

At the judge’s table:
The judges are overall impressed that not a single grain of sand made it into the food. And the winner is…
Mike Isabella wins the Top Chef Finale part 2?? I kind of believe it – what he did with the pineapple was spot-on. While I know he’s not the fan favorite – and he’s done a MASSIVE amount of shady things – his skills in this round were unique and he deserved to win. The judges called out his pineapple as well – rock star technique. Sad that this win will push him over the edge of obnoxious…

And with a top there is always a bottom… Three chefs are left… Richard’s conch was undercooked. Tiffany’s soup arrived cold and was too sweet.  Antonia’s dish was on the spicy side and there were inconsistencies in the cooking. And Padma says…

“Tiffany, please pack your knives and go.”

Wow… Really??? With tears streaming down her sweet lil’ cheeks, Tiffany Derry says “I was out-cooked and that is the bottom line”.

Tiffany, you’re probably right, but at least rest assured that it was a close-call and you lost by a hair. I, for one, would be absolutely grateful to dine at your restaurant any day. Cook on, girlfriend! And while you didn’t finish as “Top Chef” you still finished on top!

Top Chef All Stars Episode 14 Preview: Island Fever (Finale part 2)

On this week’s Top Chef All Stars, episode 14 (Island Fever): As the top chefs continue their cookoff for the title of “Top Chef” in the Bahamas, they have to cater a high-end lunch party for a yacht club’s 80th anniversary and serve up Bahamian delicacies – including conch, which the chefs must catch in the ocean. Chef Lorena Garcia, one of the country’s leading Latina chefs and creator of Big Chef Little Chef, is guest judge. This is part 2 of a 3-part finale – yeah, they’re draggin’ it out…

There's quite a bit of skin in this episode (and some of it isn't pretty)... Here's a preview of this week's Top Chef All Stars Episode 14: Island Fever:

The Quickfire:
Looks like the chefs are pairing up for this challenge and its boys against girls. Their making their dish for dish 100 people.
  • Richard Blais picks Mike Isabella first, but Antonia Lafaso would have picked Tiffany Derry anyway, since Tiff is always calm and clear-headed. We love the Tiff…
  • Mike Isabella thinks he and Richard are the favorites (you have that half right, Mikey) and predicts they’ll win and crush the girls. We’ll just have to see…
  • Richard makes bolognaise sauce and Mike Isabella makes the pasta. They’re making a fresh pork bolognaise with macaroni and pecorino cheese.
  • Richard would love to win the Quickfire, build momentum and spread intimidation among the other chefs. That sounded arrogant.
  • Meanwhile, Antonia butchers meat like nobody’s business (flashbacks of Hung Huynh).
  • Antonia and Tiffany are making seared beef tenderloin salad with lentils and celery leaves. YUMMM….
  • The girls seem much less stressed than the boys and are more systematic in their process. But they have to plate 100 dishes and they have four components – plating won’t be quick.
  • Richard refers to Tiffany and Antonia’s dish as “slice and serve”. That’s just rude. Richie, I hope you choke (or at least get over yourself – arrogance is such a turnoff).

The Elimination Round:
  • The chefs jump ship and storm the beach, in a race for first pick of ingredients. They find boxes of gorgeous shellfish and produce, but when they open the box labeled “Conch” all they find is snorkeling equipment. Have fun fishing boys and girls!
  • Tiffany Derry is freaking because she’s never gone snorkeling before and worries about getting eaten by sharks.
  • Richard has his own fears: “I don’t want to see Mike Isabella topless. And you don’t either.”
  • Antonia thought she was a strong swimmer, but it looks like she forgot how to tread water.
  • Richard doesn’t have diving skills.

Top Chef All Stars Episode 13 Recap: Top Chef Finale Part 1

The 5 remaining chefs return for the Top Chef Finale, Part 1
How juiced were you about this week’s Top Chef All Stars, episode 13?? It made me laugh, it made me cry (that might have been the onions in my salad), but best of all: It had a serious Quickfire! So happy that Bravo TV made retribution for last week’s Top Chef slowdown. It's the first part of the Top Chef All Stars finale, so we all know this episode ain’t gonna end pretty.

And now, here’s the recap for Top Chef All Stars Episode 13: Fit for a King

A few months have passed since the previous episode and we see the five chefs arrive, looking tanned and relaxed (and Richard Blais sporting some new facial hair). While the chefs wait for their Quickfire, they take a moment to reflect on their previous seasons/finales:
  • Antonia Lafaso says she wants the title more than the money.
  • Richard Blais remembers choking in his Puerto Rico-based Top Chef finale and doesn’t want a repeat.
  • Carla Hall remembers losing her finale because she didn’t follow her own instincts – clearly, she didn’t make that mistake this season (hootie!).
  • Mike Isabella spent his break in Washington D.C., training for the finale.
  • Tiffany Derry acknowledges her “underdog” position and is grateful that she wasn’t cut at #5 again.
Then Padma Lakshmi and guest judge Eric Ripert pop in to take the chefs to their Quickfire challenge. The chefs walk into the ruins of an old fort and set eyes upon (pause – wait for it…) the Top Chef Winners from their original seasons: Hosea Rosenberg, Michael Voltaggio, Kevin Sbraga and Stephanie Izard.

Quickfire Challenge:  The remaining chefs are matched against the Top Chef of their respective season for an opportunity to beat their season’s winner. The winner for each table gets $10,000. Each table is also sporting  a mystery meat that will be used as their main ingredient. The teams and meat are as follows:
Carla Hall and Hosea Rosenberg get lamb.
Richard Blais, Antonia Lafaso and Stephanie Izard get rack of veal.
Mike Isabella and Michael Voltaggio get a whole duck.
Tiffany Derry and Kevin Sbraga get pork.

Kevin Sbraga makes Barbeque Pork with Cilantro, Celery, Shaved Onions and Citrus.
Tiffany Derry makes a Pork Stew with Potatoes, Peppers, Citrus and Allspice.
Winner: Tiffany wins! You go girl!

Hosea Rosenberg makes Braised Leg of Lamb in Red Chili Broth with Olives and Mint, Goat Cheese and Rosemary Polenta.
Carla Hall makes Rice and Harissa Lamb with Peppers, Onions and Lime.
Winner: Hosea wins… Carla’s lamb was undercooked…

Stephanie Izard makes Veal Scallopini with Tapenade and Poached Egg.
Antonia Lafaso makes a Roasted Veal, Leek and Almonds Puree with Sautéed Mushrooms, Arugula and Raisins.
Winner:  Stephanie wins over Antonia in a split judges' vote! But neither dish was anything to write home about.

Richard Blais makes a Seared Veal Loin and Braised Veal Cap with Raisins, Carrots, Potatoes and Mushrooms.
Stephanie is competing with the same dish that beat Antonia.
Winner:  Richard wins! Kinda saw that one coming…

Michael Voltaggio butchers a duck in the Quickfire
Michael Voltaggio makes a Duck Breast and Duck Leg in Bacon Vinaigrette, Burnt Leek and Coffee Pesto.
Mike Isabella makes a Cashew Dusted Spiced Duck Breast with Duck Leg and Mushroom Jus.
Winner: Mike Izzy wins over Michael V?? It was another split judges' decision, but I never saw that coming. Probably didn’t help that Michael V. did all the butchering…

With Richard, Tiffany and Mike Isabella all $10k richer, the chefs move on to the Elimination Challenge.

The Elimination Challenge: The chefs have to be on top of their game as they cook for Bahamian royalty. They have 2 ½ hours to prep in the kitchen of the hotel they’re staying at and then they’ll have 1 hour to cook at the serving location. The kitchen is fully stocked so they won’t need to do any shopping this time around.

The chef prep in the hotel kitchen with the usual chaos we see every week. It’s sad to see Carla lose her confidence, but we’ve seen this before and she always makes it through with flying colors. Mike Isabella goes off on a girl-hating rant, claiming that they’re playing it safe. I was a Mike Izzy fan until he stole Richard Blais’s chicken oysters. Since then, he’s embraced the exact obnoxiousness that made him so unlikable in his original Top Chef season.

The chefs finish prep and head to their elimination challenge local – making a pit stop at a Marde Gras-like parade, where the chefs take a moment to party with the locals. When they arrive at their cooking destination, they find out that the kitchen they have to work with is micro-sized in comparison to the one they just came from. But the chefs suck it up and get to work cooking for fifty people.

Antonia begins using one of the deep fryers and notices that the one next to it is beginning to smoke. Then the burner bursts into flames and the chefs are evacuated from the kitchen – all of them more concerned about the safety of their food over the idea of being burned alive. As the chefs wait to return to the kitchen, we see an uglier side of Richard as he tries to psych out Antonia, who is already freaking from the fiery setback.

Tom inspects the kitchen and reports back to the chefs – and it’s not good. The chemicals from the fire extinguisher contaminated their food. The chefs will have to start their meals from scratch (again). This is where I shed a tear, though it was probably from the red onion in my salad. The chefs remake their dishes, but Carla’s pork medallions are undercooked and Antonia doesn’t feel right about her dish. It’s clear that the pressure has gotten to both of them.

The chefs serve up their dishes to the judges, the King of Junkanoo and the other guests.
  • Carla serves up Fried Pork Medallion with Sweet Potato Puree, Apple Sauce and Apple Chip.
  • Antonia serves up Crispy Shrimp and Grits with Cilantro and Pickled Vegetables.
  • Mike Isabella serves up a Sous Vide Chicken, Mushrooms, Yams, Lobster Sauce and Lobster Hash.
  • Richard serves up Roasted Lamb Loin and Malted Braised Leg with Pickled Turnip and Mustard.
  • Tiffany serves up Roasted Spiced Pork Tenderloin, Dirty Rice, Curried Slaw and Tomato Jam.

Nobody seems blown away by the dishes they’re served. But what do they expect?? If there were a fire at a “real” restaurant, the entire place would have been shut down for at least a day. To get smacked with a fiery catastrophe, just to be tossed back in, an hour or so later just isn’t fair. The chef that wouldn’t be impacted by that is someone I would love to meet.

The Elimination:
All five chefs are sent to the Judges table, where they’re told that the entire meal was a miss (owch). Carla’s pork was undercooked and her apples were too sweet, Tiffany’s dish lacked complexity, Richard’s lamb was cooked well, but it was still missing something and his cannelloni didn’t impress everyone. The only chef who didn’t get the smackdown is Mike Isabella. His dish wasn’t amazing, but it didn’t suck.

Which is why we’re not surprised when Mikey wins. Are you wondering if he was the one who started the fire? I didn’t mean that. Just the lingering bitterness of chicken oysters…

And then they select the chef to send home. Padma says…

“Carla, please pack your knives a go.”

Wow… Really?? Carla takes the blow, like a champ. And she should – for most of the season, she was the champ. This was only a single episode with a single loss after many, many wins. We love you Hootie Girl!

Next week, on Top Chef All Stars Episode 14: It’s a very hot Top Chef finale! Padma sports a bikini, the chefs have to fish for their ingredients (not on a boat this time), and they’ll be cooking up one of their meals on the beach…
